Pressure Can Beetroot / Canning Beets / Preserving in a Presto Canner
On my homestead, beetroot is harvested as we need it, throughout the Winter and Spring. Towards the end of Spring, I start canning some for Summer salads, BBQs and Burgers with the lot.
Pressure Canning Beets
Sterilize canning jars
Harvest Beets under 3 inches in size and wash (Larger beets are usually too fibrous)
Trim leaves and tap root off, boil beets in water until skins easily slip off
Slice, dice or leave small beets whole
Check jars for cracks or rim damage
Fill Pint or Quart jars with hot beets, leaving 1 inch headspace
Add 1/2 teaspoon salt per pint jar (Optional)
Cover with boiling water
Check 1 inch headspace, wipe rims of jars with hot water or white vinegar, then clean dry cloth
lids and rings on finger tight
Process Pint jars 30 minutes / Quart Jars 35 Minutes
If using Weighted Gauge
Altitude 0 - 1000 ft is 10 lb weight
Altitude above 1000 ft 15 lb weight
If using Dial Gauge
Altitude 0 - 2000 ft is 11 lb
Altitude 2001 - 4000 ft is 12 lb
Altitude 4001 - 6000 ft is 13 lb
Altitude 6001 - 8000 ft is 14 lb
