How to pressure can Kangaroo meat and raw pack Silverside for canning

KANGAROO CON CARNE Recipe
3 cups dried kidney beans (Soaked overnight and drained)
butter and olive oil for browning meat and onions
3kg (6.60 lbs) Kangaroo mince (Brown in batches)
4 Pints of diced tomatoes
500g (1.1 lbs) diced onion (fried)
1 tablespoon of dark brown sugar
3 cloves of mid strength garlic, minced
1 teaspoon salt
Chilly Powder to your families taste - between 3/4 teaspoon to 1/4 cup
The amount will depend on the heat of the chillies you are using

Pressure can in Pint jars for 75 minutes and Quart jars for 90 minutes with correct weighted gauge for your altitude
Kangaroo Con carne can be served with pasta, Rice or on corn chips for Nachos or with a dollop of sour cream and cheese, as is, heated and served.
