PRESSURE CAN SWEET POTATO - Pressure Canning

I'm going to show you how I pressure can Sweet Potato using the Blue Book Guide to Preserving by Ball Mason. Pressure canning Sweet Potatoes is my favourite way to preserve this fabulous tuber. I love growing Sweet Potato as it's a beautiful vine that grows up my vegetable garden fence, not taking up too much space and creating some well needed shade. You can harvest the fresh leaves throughout the summer, that's bonus food while you wait for the sweet potatoes to grow and then harvest the sweet potato in autumn when the leaves start to yellow and before the first frost. It is best to preserve your sweet potato within 3 months of harvesting, so long as you store them in a suitable location. Choose the smaller to medium potatoes for pressure canning as they are the best quality and enjoy your larger more fibrous potatoes in soups or as chips and your other favourite ways to eat them.
