Slow Living Start to Spring Homestead / Seasons Early Spring / Moat Cottage Homesteading

JERUSALEM ARTICHOKE SOUP

2 diced Onions

1 Tablespoon Butter

1kg Jerusalem Artichokes washed and chopped

2 cups of white Wine

2 Litres of Chicken or Veggie Broth

½ teaspoon dried Chilli Powder

Salt and Ground Pepper

Chives and Sour Cream to serve


Onions browned on skillet in Butter

Add All Ingredients except Chives and Sour Cream to a large Pot

Cook on Medium Low until Artichokes are tender

Blend and serve with Sour Cream and Chives

Soup Freezes well


LEMON MINT CORDIAL

5 Tablespoons Raw Honey

4- 6 Lemons Juiced

Water

Fresh Mint

Dissolve Honey in hot water

Add Lemon Juice, Cold Water and then Mint

Refrigerate


RAW GARLIC SAUCE

Makes ½ Pint

¼ Cup Peeled Garlic cloves

½ Teaspoon Sea Salt

1 Cup Grapeseed Oil

2 Teaspoons Fresh Lemon Juice

Blend really well, refrigerate


FLAT BREAD

2 Cups Plain Flour

1 Tablespoon Honey

1 ¾ Teaspoon Yeast

1 ½ Teaspoon Sea Salt

¾ Cup Warm Water

Mix to form dough

Knead 10 minutes

Roll out 1/7 of dough on floured surface

On smoking hot cast iron skillet

Cook flat bread on both sides, approximately 1 minute each side

Makes 7 Flat Breads
