Cottagecore Cooking / Homemade Pasta With Stinging Nettle Sauce

Relaxing, Cottagecore Cooking is done when you have a cozy day in the kitchen, with plenty of time to enjoy the experience.

Cooking from scratch, with as many ingredients off my small homestead as possible, are the results of many years of work paying off.

The most basic ingredients like stinging nettles, lemons and eggs, turn this dish into the most flavourful pasta imaginable and make a cloudy day feel special.

So join me with the classical soundtrack and spend some time in my homestead kitchen making homemade Pasta and Stinging Nettle Sauce from scratch .......


Egg Pasta

3 Cups Plain Flour / All Purpose to 3 Eggs

I use big eggs in Australia because our cups are bigger than the US cups.

If you use US measuring cups, you may need to add a little more flour or smaller eggs. Method

Mix and knead for 10 minutes

Rest for 1 to 2 hours

Cut to shape, dust with Flour and dry for 30 minutes

Cook in boiling salted water for 5 minutes


Stinging Nettle Sauce

2 Handfuls of washed and boiled for 60 seconds Stinging Nettles

1/2 Cup Toasted Raw Almonds

1 Cup Grated Parmesan Cheese

Pinch Sea Salt

Black Pepper

Juice of 2 Fresh Lemons

Enough Olive Oil to get the consistency you want

Method

Chop nettle stems up a bit and Blend all ingredients together
